Pumkin seeds
Sunflower hearts

Directions
1. Mix the porridge oats, maple syrup and honey together.
2. Spread the mixture thinly on a baking tray.
3. Bake in oven 180c/Fan, Gas Mark 6 for 10 mins.
4. Add the dried fruit, seeds and almonds.
5. Place in a sealed container and shake to mix. Leave to cool.
6. Serve with natural yoghurt and fresh fruit if you choose.
Tip
Whilst the mixture is cooling keep the lid sealed on the container as it prevents the mixture from becoming too dry. This makes it deliciously crunchy and moist at the same time!
Easy Coq Au Vin
4 chicken Legs
3 slices of bacon (diced)
8-10 peeled shallots
12-15 button mushrooms
3-4 tsp flour
3rd of a bottle of red wine
2 tbsp brandy or cognac
175 mL chicken stock
Bouquet Garni
Salt & pepper to taste
Olive oil
Directions
1. Using a casserole dish, fry the chicken legs in a splash of olive oil (on a medium heat) skin side down, until the skin turns golden brown.
2. Remove the chicken legs and set them aside.
3. Fry the bacon, shallots and mushrooms until almost brown.
4. Coat the bacon, shallots and mushrooms in the flour, then gradually add the chicken stock, brandy and red wine and stir to keep the sauce smooth.
5. Add the chicken legs to the casserole dish and top up with stock so that the chicken is covered.
6. Add the bouquet garni, salt and pepper to taste.
7. Simmer for 35-40 mins.
Tip
This meal can be served with your favourite vegetables and potatoes. It also goes well with rice!
Easy Chicken Curry
2 chicken breasts (cut into bite sized pieces)
1 tbsp olive oil
1 medium-sized onion (grated)
4 cloves of garlic (grated)
3cm piece fresh root ginger (grated)
4 tsp garam masala powder
2 tsp cumin
2 tsp turmeric
2 tsp dried coriander
2 tbsp tomato puree
200mL chicken stock
Salt and pepper to taste
250g basmati rice
Directions
1. Using a hand blender, puree the onion, garlic and ginger.
2. Heat the olive oil in a frying pan and cook the puree for 3 mins.
3. Add the garam masala, cumin, turmeric and coriander to the puree and cook for another 1 min.
4. Add the seasoning, tomato puree and chicken stock and cook for another 20 to 25 mins.
5. Cook rice per packet instructions.
6. Serve the curry with the rice.
Tip
Add 1-2 finely chopped green chillies to the curry sauce for a bit more heat!
